Ingredients
For the dough
- 300g strong white bread flour
- 225ml warm water
- 1 tsp salt
- 1 tsp instant yeast
- 1 tbsp olive oil (plus more for greasing)
For the sauce
- 1 tin chopped tomatoes
- 2 cloves garlic, minced
- ¼ small red onion, finely diced
- ½ tsp dried oregano
- ½ tsp dried basil (or a few torn fresh basil leaves)
- Pinch of chilli flakes (adjust to taste)
- Salt to taste
- 1 tsp olive oil
For the toppings
- 100g Monetary Jack cheese
- 150g grated mozzarella (low moisture, if possible)
- Optional: sliced pepperoni, red onions, jalapeños
- Optional garnish: parmesan, fresh basil

- 10″x14″ Detroit-style pizza pan or deep rectangular baking tray
Method
Step 1: Make the Dough
In a large bowl, mix the flour, salt, and yeast.
Add the warm water and stir until a sticky dough forms.
Add olive oil and knead for 2–3 minutes until smooth.
Cover with cling film or a damp towel and leave to rise at room temperature for 3–4 hours (or overnight in the fridge).
Step 2: Make the Sauce
Heat olive oil in a saucepan over medium heat.
Add the red onion and garlic, cooking for 2–3 minutes until softened.
Stir in the chopped tomatoes, oregano, basil, chilli flakes, and a pinch of salt.
Simmer for 10–15 minutes, stirring occasionally, until the sauce thickens.
Optional: Blend slightly for a smoother texture or leave chunky for a rustic feel.
Step 3: Prepare the Pan
Generously oil your pizza pan or deep baking tray.
Transfer the risen dough into the pan and gently press it toward the edges.
Cover and let it rest for 30 minutes until it fills the tray and becomes puffy. If it rises too much, knock it back down before adding the cheese.
Step 4: Add the Cheese and Toppings
Sprinkle the mozzarella and Monterey Jack cheese evenly across the dough, making sure you get right into the edges.
Add two stripes of tomato sauce.
Add any optional toppings, like pepperoni or sliced jalapeños.
Step 5: Bake the Pizza
Bake in the pizza oven for 5–7 minutes, or until the cheese is bubbling and the edges are golden brown, rotating the pan for an even cook.
Step 6: Slice and Serve
Cut into square slices and serve hot.
Finish with a sprinkle of parmesan or fresh basil if you like.
