Margherita Pizza

Ingredients
For the Dough:
There are a few options when it comes to making pizza dough. We have two dough recipes to choose from: ’00’ flour dough and White bread flour dough. Alternatively you can order some of our pre-made dough: Neapolitan dough or Gluten Free dough.
For the Sauce:
- 1 cup canned San Marzano tomatoes (or any high-quality tomatoes)
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt to taste
- A pinch of sugar (optional, to balance acidity)
For the Toppings:
- 8 oz (225g) fresh mozzarella cheese
- Fresh basil leaves
- 2 tablespoons olive oil
- Optional: Grated Parmesan cheese for garnish
Method
1. Prepare the Dough: Follow the instructions for your chosen recipe or allow your pre-made dough to proof.
2. Make the Sauce:
- Heat olive oil in a small saucepan over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add the canned tomatoes, crush them lightly with a spoon, and let the sauce simmer for 10-15 minutes until thickened.
- Season with salt and a pinch of sugar if needed. Let it cool.
3. Assemble the Pizza:
- Heat up your pizza oven to 350-400°C.
- Stretch out your dough ball on a floured surface into a 12-inch circle or larger if you are wanting a bigger pizza base.
- Spread a thin layer of your sauce over the dough, leaving a small border around the edges.
- Add slices of fresh mozzarella evenly over the sauce.
- Drizzle with olive oil and add fresh basil leaves.
4. Bake the Pizza:
- Use a pizza peel to place your pizza into your pizza oven.
- Once your pizza is in the oven you will need to turn the pizza every 20-30 seconds.
- We recommend using a turning peel as it allows you to spin the pizza without having to remove it from your pizza oven.
- Pizza ovens cook pizza very quickly (usually 60-90 seconds) so make sure you keep an eye on it as it is cooking to prevent it from burning.
- Remove from the oven, garnish with a few more fresh basil leaves, and drizzle with olive oil.
