- 1 cup canned San Marzano tomatoes (or any high-quality tomatoes)
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt to taste
- A pinch of sugar (optional, to balance acidity)
Toppings
- 2–3 tbsp ‘nduja sausage (spreadable spicy pork sausage)
- 1 cup (100 g) fresh mozzarella, torn into small pieces
- ¼ cup (25 g) grated Parmesan cheese
- Fresh basil leaves
- Optional: A drizzle of honey for balance (optional but recommended)
- Optional: Thinly sliced red onion or roasted red peppers for extra texture
Instructions
1. Prepare the Dough:
Follow the instructions for your chosen recipe or allow your pre-made dough to proof.
2. Make the Sauce:
- Heat olive oil in a small saucepan over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add the canned tomatoes, crush them lightly with a spoon, and let the sauce simmer for 10-15 minutes until thickened.
- Season with salt and a pinch of sugar if needed. Let it cool.
3. Assemble the Pizza:
- Heat up your pizza oven to 350-400°C.
- Stretch out your dough ball on a floured surface into a 12-inch circle or larger if you are wanting a bigger pizza base.
- Spread a thin layer of your sauce over the dough, leaving a small border around the edges.
- Tear small pieces of ‘nduja and scatter them over the pizza.
- Add mozzarella pieces and sprinkle grated Parmesan cheese.
4. Bake the Pizza:
- Transfer the pizza to the pizza oven and bake for 60-90 seconds, or until the crust is golden, the cheese is bubbly, and slightly browned.
- Remove the pizza from the oven and immediately garnish with fresh basil leaves.
5. Serve:
- Optionally, drizzle with a touch of honey for a sweet contrast to the spicy ‘nduja.
- Slice and enjoy while hot!
