How to make Lasagne
Cooking lasagne in a pizza oven is a fantastic way to achieve a unique, smoky flavour and perfectly caramelised edges. Here’s a recipe tailored for this method.
Ingredients
For the Meat Sauce:
- 2 tbsp olive oil
- 1 lb (450g) ground beef
- 1 lb (450g) Italian sausage (removed from casings)
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 2 cans (28 oz each) crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp sugar
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
For the Cheese Filling:
- 15 oz (425g) ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup fresh parsley, chopped
- 1/4 tsp nutmeg (optional)
Additional Ingredients:
- 12 lasagna sheets (precooked if required by the brand)
- 2 cups shredded mozzarella cheese (for layering)

- Cast iron skillet & dish
- Aluminium foil
Method
Preheat Your Pizza Oven
- Fire up your pizza oven to it’s optimal temperature. Then allow your pizza oven temperature to drop to 190°C–200°C. Use an infrared digital thermometer to monitor the temperature as pizza ovens can get very hot.
Prepare the Meat Sauce
- In a large cast iron skillet, heat olive oil over medium heat. Add the ground beef and sausage. Cook until browned.
- Add onion and garlic. Sauté until softened.
- Stir in crushed tomatoes, tomato paste, sugar, oregano, basil, salt, and pepper. Let the sauce simmer for 15–20 minutes.
Make the Cheese Filling
- In a bowl, mix ricotta, 2 cups mozzarella, Parmesan, egg, parsley, and nutmeg until smooth.
Assemble the Lasagne
- Spread a thin layer of meat sauce on the bottom of your cast iron dish.
- Add a layer of lasagna sheets, followed by a layer of cheese filling, then meat sauce. Repeat until all ingredients are used, finishing with a layer of meat sauce topped with shredded mozzarella.
Bake in the Pizza Oven
- Cover the dish tightly with aluminium foil to prevent excessive browning.
- Place the dish in the pizza oven. Rotate it every 10 minutes for even cooking.
- Bake for 30–40 minutes until bubbly and hot.
Brown the Top
- Remove the foil and let the lasagne cook uncovered for an additional 5–10 minutes to brown the cheese.
Rest and Serve
- Let the lasagne rest for 10–15 minutes before slicing to ensure clean layers.
